Food Trip: Bibingka

Before I finally sail back to Manila, I decided to buy some pasalubong for the family. Just in front of the inn where I stayed is Boac's Public Market. It's actually just a small market with a lot of fascinating stuff! One of them is the Bibingka. In Manila, the Bibingka is popular during the yuletide season, but it remains the ultimate merienda favorites of the Filipinos. The latter is cooked on coal topped with slices of salted egg and coconut meat shredding.

In Marinduque, it is prepared differently. It is pretty plain and simple resembling to a pancake. But this yellow, fluffy disc is oozing with flavors. A must try! If you plan to taste this, be sure to be early at the market. People swarm over them. You just might not get one!
